1 cups chick peas (cooked)
2 tbs Apple Cider
2 tbs Vinegar
1 tbs Soy Sauce
1 tbs Olive Oil
1/2 tsp Turmeric
1/4 tsp mustard
1/4 tsp sea salt (optional)
1/2 tsp black pepper
1/2 tsp Chili pepper (Optional...add extra for more spice)
1/2 cup chopped cucumbers
1/2 cup chopped beets
1 to 2 tomatoes chopped
Blend apple cider, vinegar, soy sauce, olive oil, turmeric, mustard, salt, black pepper and chili sauce into a bowl.
Mix chick peas, cucumbers and beets together.
Blend both mixtures together. Sprinkle chopped mint leaves on top and chill for about 30 mins or more.
Tasty, simple and as always healthy.
